----> Granny Witch's Cabbage Stew



My husband's maternal grandmother's last name is Rich.
When our son was learning to talk he used to call her Granny Witch.  It was one of those things that's too cute/hilarious to correct - so we just let him call her that.  We all got a kick out of it and he really thought that was her name...and that she was a witch; like one from Halloween.  So in keeping with the season, here's one of my favorite recipes from Granny "Witch".
 
This is one of those soups that's delicious and full of vegetables.  My kids even eat it, and they don't usually eat anything that's not laced with sugar or deep fried.  Hopefully yours will love it too!
 


 

Granny Witch's Cabbage Stew

1 large can Campbell's Tomato Juice
1.5 cups celery, chopped
1.5 cups carrots, chopped
1/2 cup onion, diced
1 can green beans, undrained
1 can corn, undrained
1 lb. ground beef, cooked and drained
1/2 head cabbage, chopped 
salt and pepper to taste

Cook beef and drain fat.  Combine all ingredients in a big pot and cook until vegetables are tender.  


I usually get it boiling and then put a lid on it and simmer for an hour and a half.

I love Granny Witch. She was such a great person. (I know she is still alive, but I haven't seen her in years.) Darcey's Grandpa Rich use to call me and Amy "Sally" so we called him George. :) (We were the only ones to get away with that.)

And I remember Grandma Linda always made the BEST rolls. :)
